Cinco de Mayo For Bebe
Any excuse to eat tacos/nachos/burritos/fajitas and indulge in a Paloma (or 3) is high on my list of priorities. However, adding a baby into the mix means things are a bit different in my kitchen this year. More cheesy and decidedly less tequila-y.
Happily, Finley has been a great eater so far, always trying a mouthful of our adult dinner before deciding to keep on munching or toss it down to Lanta. Before embarking on table foods, Matt and I decided we wouldn't be that family making multiple meals to suit everyone's taste. Dinner is XYZ, Finley can choose to eat that or have a Love Child pouch (and in the future some other basic household staple. Eggs? PBJ? To be decided). So far, its working well. Stay tuned for a possible episode of Humble Pie.
But back to Cinco de Mayo...
We adults are having Fajitas, so I decided to make a baby-friendly version for Finley. Smaller peppers and chicken, less onions, and half the seasoning. I put the fajita mixture into a tortilla with some shredded and melted cheddar cheese, always a favourite. I offered her a bit of sour cream on the side for dipping and a few sprigs of cilantro to introduce a new herby flavour. Just for fun, a little wedge of lime to see what she thought. Also, because if I'm cutting limes for my own adult beverage, she will demand one anyways.
The verdict? Sour cream, a huge hit. Cilantro, try again later. Lime, no thanks mom. Everything else, down the hatch without a fuss!
